When filing papers in court, I need to include Proof of Service, which means the Proof of Service I mail to the other party will not have a filing stamp. The other party keeps objecting to my papers because her Proof of Service does not have a court filing stamp. Why is this happening and what can I do about it?

I built a backyard roller coaster. I am not a licensed contractor. I have been mentored by an actual roller coaster designer and carpenter, and the work is very professional. I would like to help people who want a backyard coaster to build one. I would not charge for my service or time, as it would be enjoyable and help me prepare for a job offer to work on large professional coasters in early 2019. The only expenses would be for the materials. I am concerned about liability. Could I create an LLC or something similar to protect myself, or draw up paperwork? I want to help but also protect myself.
