She eats poop and chews on Kleenex and dryer sheets. She is not eating dinner and seems more tired than usual. When should I take her to a vet?

My dog, Boone, was diagnosed with diabetes 3 weeks ago. He eats and receives insulin at 5:30 am and 5:30 pm every day. He recently ate about 5 ketchup packets at 2:30 pm. Does he need more insulin? He's a large dog (80 lbs) and is still unregulated. Is it normal for him to not be acting much better after being diagnosed three weeks ago? Is there any treatment to help prevent or slow the development of cataracts due to his diabetes?
